Scientists are promising calorie reductions in rice of 50-60%. The research claims that by cooking the rice in coconut oil and then leaving it to cool, the calories in the rice will be reduced. Okay, I concur that obesity is an epidemic that needs to be checked. But really, is white rice the source of this growing problem? Populations that have a culture of eating rice as their staple, mostly notably throughout Asia – Are they eating too much rice?… They’ve always eaten this staple in vast quantities. I believe not, I think the root cause to growing obesity in these primarily developing countries (the research was carried out in Sri Lanka) is that they are becoming increasingly westernised in their dietary and nutritional choices. Haven’t we seen this before? With food scientists manipulating our foods to become “low fat” or “low calorie” and this has failed to resolve the obesity problem in the West. Actually, the situation has grown exponentially in this time. Re-engineering our food is not the solution. In my opinion, research and education should focus on the fundamentals of improving our eating habits to achieve a better and more healthy lifestyle.
