Piña Shu-lada Cocktail

Forget the blender and sugary, sticky mixers—this light and refreshing spin on a classic colada is dangerously delicious and super easy to make. Coconut cream, lemon, and pineapple create all those familiar flavors you love, and spiced rum amps up the yum factor. You finally have an excuse to break out those cocktail umbrellas you've been holding onto!

Directions

  1. Muddle pineapple in a pint glass or mixing tin. Add remaining ingredients except crushed ice and shake. Double-strain into a tall glass and add crushed ice, desired.
  2. Garnish with thin pineapple slice or pineapple leaves and an umbrella.

Recipe created exclusively for Greatist by April Wachtel, owner and educator of Swig + Swallow and Craft Mocktails.

Ingredients

  • Pineapple wedges
  • 1 1/2 parts spiced rum (we like Sugar Island Spiced Rum)
  • 2 parts coconut cream
  • 1 part fresh lemon juice
  • 3 pinches cinnamon
  • Ice cubes
  • Crushed ice, to serve (optional)
